♥ Cherry Chocolate Gooey Blondie ♥



Gooey...chewy...hmmm! These blondie bars are full of caramel flavor.



The soft brown sugar has made its caramelized flavor, giving a very sticky texture. 


The combination of cherry and chocolate reminds me of black forest cake. I used a cherry preserve which mostly has whole cherry in it, but if you only have the jam, swirl them into the batter.

Adapted from Honeysuckle Catering
You'll need:
110g unsalted butter, melted
3/4 brown sugar
1 egg
1 tsp vanilla extract
1/4 tsp salt
1/8 tsp baking soda
1 cup all purpose flour
3/4 cup semi sweet chocolate, chopped
3/4 cup cherry preserve

How to make cherry chocolate gooey bar:
  1. Preheat oven to 180C. Line an 8x8 baking tray with parchment paper and set aside.
  2. In a mixing bowl, mix together melted butter, sugar, egg and vanilla.
  3. In another bowl, combine flour, baking soda and salt. Add the flour mixture to the wet and stir to combine.
  4. Add chopped chocolate and cherry preserve, stir to combine.
  5. Transfer to baking tray and bake for 18-20 minutes, or until set and golden brown.

♥ 3 Ingredients Almond Oat Bar ♥


I am so obsessed with granola and cereal bars.
They are tasty and make a quick breakfast to go in the early morning.




This 3 ingredients recipe rocks with natural almond butter, honey and rolled oats. Making some chewy, nutty and naturally sweet breakfast bars which are slightly different from the typical crunchy version.



Try and keep this handy recipe. And you might want to ditch those commercial cereal bars.

You'll need:
3/4 cup honey
1 cup almond butter
3 cups old fashioned rolled oats
1 tsp cinnamon, optional

How to make easy almond butter oat bars:
  1. Preheat oven to 180C. Line an 8x8 baking tray with parchment paper or aluminum foil, set aside.
  2. In a saucepan, heat honey and almond butter to melt.
  3. Remove from heat. Pour the honey mixture into the oats, and cinnamon if using. Toss to coat evenly and spread onto baking tray.
  4. Bake for 15 minutes. Let cool completely and cut into equal pieces.

♥ No Bake Peanut Butter Coconut Cereal Bar ♥


What is your best healthy treat? To celebrate the "early" Easter, I have made some breakfast cereal bar. Using only peanut butter, coconut oil and added some flaxseed.



They are crunchy, with a strong nutty flavor which definitely fill your day long.




I am recently so addicted to this Japanese fruit cereal from Calbee. But if you can't find one or anything similar, please use rice krispy treat as the original recipe does. A little chocolate doesn't hurt anybody too :)

Make 6
You'll need:
4 tbsp coconut oil
1/3 cup peanut butter
2 tbsp honey
1 teaspoon vanilla
1 cup fruit cereal
1 cup old fashioned rolled oats
2 tbsp chopped hazelnuts, or other nuts of your choice
2 tbsp flaxseed
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 cup white chocolate
1-2 tbsp vegetable oil, for melting chocolate

How to make coconut oil peanut butter cereal bar:
  1. In a medium saucepan, combine coconut oil, peanut butter and honey. Cook over low heat until melt and smooth while stirring continuously. Remove from heat and add vanilla.
  2. In a large bowl, toss together cereal, rolled oats, chopped nuts, flaxseed, cinnamon and nutmeg. Pour the peanut butter mixture and stir to coat evenly.
  3. Press the mixture into a round pie dish, allow to sit for 5 minutes and let it set in the fridge.
  4. Meanwhile, melt white chocolate, add vegetable oil to smoothen if necessary, transfer to a piping bag.
  5. Divide the cereal bar into 8 equal triangles. Decorate with a melted white chocolate.

♥ Peanut Butter & Jelly Cornmeal Biscotti ♥



Look at that thin layer of strawberry jam!


Archibald's honey is a 100% Australian Honey. This big yellow bucket of honey. is from Honey 蜜蜜針! Check out more at their FaceBook Page!


I added some natural honey for amber color and sweetness.



Also, another credit to Natvia! It is a sweetener which is made out of organic stevia. 100% natural sugar, a great healthy substitute to our white sugar that it consists of 97% less calories.


The cornmeal in this recipe has given these biscotti more specialist texture, an awesome bursting of cranberries, strawberries and honey flavor. How incredible when American cookie dunked in Italian coffee!

Make 1 dozen
You'll need:
250g (1 3/4 cup) all purpose flour
110g (3/4 cup) cornmeal
1/2 tsp baking powder
1/4 tsp salt
40g (3 tbsp) unsalted butter
40g (3 tbsp) peanut butter
70g (1/3 cup) Natvia
110g (1/3 cup) Honey
2 large eggs
100g (1 cup) dried cranberries
60g (1/4 cup) strawberry jam

How to make peanut butter and jelly cornmeal biscotti:
  1. Preheat oven to 170C. Line a baking sheet with parchment paper and set aside.
  2. In a medium bowl, combine flour, cornmeal, baking powder and salt.
  3. In a large mixing bowl, beat together butter, peanut butter until fluffy. Add Natvia, honey and eggs, one at a time, mix until well combined.
  4. Add the dry ingredients to the wet. Using a spatula or a wooden spoon, fold in dried cranberries and stir until the batter comes together. Divide the batter into half. 
  5. For each half, spread half of the batter and form a log on prepared baking sheet. Spread 1/8 cup strawberry jam evenly on top and spread the remaining half batter. Reform the log using damp hand. Repeat for the remaining halved batter.
  6. Bake in oven for 30-35 minutes. Remove the pan from the oven and turn down to 140C. Let the logs to cool for 10 minutes before handling.
  7. Slice the logs diagonally into 1/2 inch thick. Arrange the slices, cut side down, on the baking sheet. Return them to oven and bake for 15-20 minutes.
  8. Transfer to wire rack and cool completely.

♥ Saltine S'mores Fudge Sandwich ♥



S'mores!! Meaning more chocolate and marshmallow! With no campfire needed!


Instead of graham cracker. I would rather prefer a sweet and salty combination of Saltine crackers! And mine is whole wheat with sesame flavor, hmmmm!!!


This is a simple chocolate fudge recipe adapted from Bigger Bolder Baking. I alternated with saltine crackers, and I suppose this would be the best LAST MINUTE Valentine's gift!

You'll need:
1 can (14 oz) sweetened condensed milk
1/4 cup unsalted butter
3 1/3 cups semi-sweet chocolate chips
1 tsp vanilla
1/2 tsp salt
2 cups mini marshmallows
24 Saltine crackers

How to make saltine cracker s'mores fudge sandwiches:
  1. Prepare a 8 x 8 square pan and line it with parchment paper. 
  2. Line saltine crackers on the bottom of the pan and fill the edges with halved crackers. Set aside.
  3. In a bain-marie or a heatproof bowl over simmering water, combine condensed milk, butter and chocolate chips. Stir until mixture is melted completely.
  4. Remove from heat, add vanilla and salt. Pour half of the chocolate fudge into saltine base, sprinkle mini marshmallows and press them into the fudge.
  5. Pour the remaining half of the chocolate mixture and spread to even the top. Line remaining saltine crackers and place in the refrigerator for at least 6 hours until set.
  6. Slice into 16 equal pieces and let them come to room temperature when serve.

♥ M&M Oreo Cream Cheese Blondies ♥



Oreos? M&Ms? How could these go wrong? I am totally inspired to "clean up my pantry".


These brown sugar blondies are loaded with all the good stuffs. I mean... who doesn't want a cookie bar with ADDITIONAL cookie crumbs and RAINBOW chocolate chips. Or probably a scoop of ice cream to sandwich them.



Instead of ice cream sandwiches, I decided to layer them with a cream cheese layer, just like this one. They are just temptingly good!

You'll need:
For blondie layer
125g (1 stick) unsalted butter, melted
215g (1 cup) light brown sugar, packed
1 large egg
1 tsp vanilla
130g (1 cup) all purpose flour
14 Oreo cookies, coarsely chopped
87g (1/2 cup) M&M's chocolate

For cheese cake layer
125g (4 oz) cream cheese, at room temperature
65g (1/3 cup) Natvia
1/4 tsp vanilla
1 beaten egg, halved

How to make M&M oreo cheesecake blondie bars:
  1. Preheat oven to 180C. Line an 8 x 8 baking tray with parchment paper, set aside.
  2. In a large mixing bowl, combine melted butter, egg, brown sugar and vanilla. Add flour and mix until incorporated.
  3. Add chopped oreo cookies and m&m's chocolate. Fold gently using a spatula.
  4. Pour 2/3 of the batter into prepared baking tray and flatten in an even layer.
  5. In another bowl, add cream cheese, Natvia, vanilla and half of a beaten egg. Cream until smooth with no lumps. Spread cream cheese mixture onto blondie batter. 
  6. Dollop remaining blondie batter onto the cheese layer. Using a knife, spread and swirl the layers together. 
  7. Bake for 35-40 minutes, or until golden brown and cheese layer is set. Cool for 10 minutes before transferring to wire rack to cool completely.

♥ Disappearing Marshmallow Matcha Blondies ♥


Matcha Green Tea Brownies? They should be blonde brownies. No! Should be "Greenies".


These greenies bars are white chocolate brownies with added matcha green tea. Tossed in some leftover pistachio nuts, some more white chocolate chips. Oh! And how about some mini marshmallows?


Have you noticed those hollows? Poop! They are disappearing marshmallows. 



In general, marshmallows are made with sugar, gelatin and air. So as they bake, the sugar melts and air bubbles escape. This happens to give disappearing marshmallows. And just so this is how I name them.

You'll need:
1/2 cup (1 stick) unsalted butter
1 1/2 cup white chocolate chips
2 eggs
1/4 tsp vanilla
1/4 cup matcha powder
1 cup all purpose flour
1/2 cup pistachio nuts, shell removed
1/2 cup mini marshmallows

How to make matcha green tea blondies:
  1. Preheat oven to 180C. Grease a 8 x 8 square pan and set aside.
  2. In a heatproof bowl, melt butter and 1 cup white chocolate chips until smooth. This can be done in microwave oven in 30 second increments or a bain marie. Let cool slightly.
  3. Add eggs, vanilla and sift in matcha powder. Stir to combine. Add flour, mix well.
  4. Using a spatula, fold in pistachios and remaining chocolate chips. 
  5. Pour half of the batter into prepared baking tray. Spread marshmallows in a layer and top with remaining batter. Smooth the top evenly.
  6. Bake for 20-25 minutes, or lightly brown on the edges and toothpick inserted into centre comes out clean. Cool completely before slicing.
